Europe’s cheese market has firmed through early summer, and the reason is straightforward: heatwaves across the continent have cut milk output right as holiday season thins out trading. That combination pushed prices higher before the market had settled into its usual summer rhythm. Sellers grew reluctant to commit, and buyers moved to lock in volumes before supply tightened further, mozzarella most of all.
Mozzarella is the standout. Fresh cheese demand climbs with the temperature, and this cycle it climbed fast while an early heat spike tightened availability, keeping the category at a premium to the rest of the complex. Northwestern Europe has since cooled, which should take some heat, literally and figuratively, out of the market. A modest softening from the top of its Q3 range now looks more likely than a further climb.
Cheddar tells a different story. It has held up reasonably well but still looks cheap against the rest of the market, which gives it the most upside into Q3 once trading resumes. The CME cheddar block added 8 cents this week on active trading, helped by hot weather trimming components and spot milk, even as US demand for American-style cheese softens. US cheese disappearance ran 1.4% higher through May, but American-style consumption fell 2.2% on the month while Italian styles like mozzarella rose 2.7%. As CME prices climb, the pricing edge US cheddar has held internationally is narrowing.
Gouda has calmed after an eventful few weeks. An earlier dip in milk output left buyers nervous enough to cover Q3 and part of Q4, but cooler weather is already reviving output and easing the tightness. Its Q3 direction now hangs mostly on rain. Emmental is the quiet one, tracking the broader complex with little fresh trade and forward interest for Q4 still muted.
The real test lands around mid-August. A continued dry spell would bring the nervousness and demand back; normal weather would keep things calm. Until buyers return from holiday, Vesper expects the market to trade rangebound rather than break in either direction.
